True Food Kitchens (one of the Fox Restaurants) ants you to trade in your four-wheeled transportation for the two-wheeled variety this Earth Day (Thursday). If you do, they will treat you to a free breakfast. It’s called “Speak Up with Spokes” (awwwww, cute!). True Foods Kitchen is in the Biltmore Fashion Park, btw. The chefs specialize in using high-quality local and regional ingredients that manage to be good for us and taste great!

You’ve got to show a coupon to take advantage of this deal. The coupon can be yours if you become a Facebook fan of Fox Restaurant Concepts at  or signing up for FRC’s e-blast.

For this special offer, guests can choose from 11 different breakfast entrées, including the Egg White Sandwich with turkey bacon, provolone, and tomato; or the Wild Sockeye Salmon Lox on grain bread, with Labneh Cheese, capers and onions.  Other favorites include the Organic Oatmeal with brown sugar, milk and dried figs; or the Quinoa Blueberry Johnny Cake with pure maple syrup and Greek yogurt. Heartier dishes are also available, such as the Open-Faced Egg White Omelet with mushrooms, kale, truffle oil, and parmigiano; and the Greek Frittata featuring organic eggs, tomato, onion, Kalamata Olives, feta and oregano.
